Chicken Fried RiceAs we discussed previously that using LEFTOVER RICE is best choice to make fried rice whether it may be beef fried rice or chicken fried rice, if you use leftover rice ‘Chicken Fried Rice’ becomes most tasty dish.

Ingredients

  • 3/4 cup finely chopped onion.
  • 4 cups cold cooked rice, grains separated (preferably take medium grain).
  • 2 tablespoons soya sauce
  • 2 1/2 tablespoons oil.
  • 1 egg, lightly beaten (or more than 1, as per your wish).
  • 4 green onions, chopped.
  • 1/2 cup finely chopped carrot (small).
  • 1/2 cup frozen peas.
  • 8 ounces chickenor 8 ounces cooked lean boneless pork (chopped).
  • 2 tablespoons light soya sauce (add more as per your wish).
  • 2 cups beans.
  • 2 tablespoons sesame oil.

Instructions

  1. Heat 1 tbsp oil in pan or wok.
  2. Add chopped onions and stir-fry until onions have brown color, Arround 8 to 10 minutes; remove it from wok .
  3. Take same wok. Allow it to cool slightly.
  4. Mix egg with 3 to 4 drops of soya sauce and 3 to 4 drops of sesame oil ( set aside ).
  5. Add 1/2 tbsp oil to wok, swirling to coat surfaces.
  6. Add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly.
  7. Remove from wok, and chop into small pieces.
  8. Heat 1 to 2 tbsp oil in wok, Add selected meat to wok, along with peas, cooked onion and carrots; stir-fry for 2 to 3 minutes.
  9. Add rice, green onions, and beans, mix it well. Again stir-fry for 2 to 3 minutes.
  10. Add 2 to 3 tbsp of light soya sauce ( you can add it as per your choice ) and chopped egg to rice mixture and fold in; stir-fry for 1 minute more.
  11. Now it is ready to serve. You can set additional soya sauce on the table (if desired).

Notes

You can add mushrooms in this recipe. And instead of sesame oil you can take vegetable oil also.
